A loaded Greek salad, both with flavor and ingredients! The Ultimate Greek Salad is a perfect compliment to a Mediterranean meal or served as the main dish with a gluten free flatbread, pizza, or gluten free breadsticks.

½largehead of organic romaine lettuceleaves rinsed and dried, then torn or cut into bite sized pieces
¼-½cupTrader Joe's Marinated and Roasted Artichoke Hearts, cut into quarters
¼-½cupMezzetta Golden Peperoncini Peppers, whole or sliced
⅜cupTrader Joe's Kalamata Olives or Greek Olives
6ozcherry tomatoes, cut into halves
½cupMezzetta Roasted Red Bell Peppers, sliced
¼largered onion, finely sliced
¾cupTrader Joe's Organic Feta Cheese, crumbled
Dressing
2 tbspred wine vinegar
2 tbspwhite balsamic vinegar
¼cupolive oil or avocado oil
1teaspoon fresh oregano or 1/2 teaspoons dried oreganogf brand for dried oregano
1teaspoonlemon juice
¼teaspoon Kosher salt
freshly ground black pepper
Instructions
Ultimate Greek Salad
In a large bowl or platter, add the romaine to the bottom. Add piles of artichoke hearts, pepperoncinis, olives, cherry tomatoes, and roasted red peppers around the edge of the bowl or platter.
Top with feta and red onion. Drizzle evenly with the dressing. Toss the salad together if desired.
Dressing
Combine the ingredients in a 2 cup measure. Whisk together until smooth and creamy.

What a great summer meal! I love loaded salads and this one definitely is! Serve along some marinated and grilled chicken or other grilled meat or just enjoy as the meal with some bread or breadsticks.
