Buffalo Slightly Spiced Baked Chicken Wings made Gluten Free
Getting to eat appetizers when dining out is one of my absolute favorite surprises. Often though, many restaurants don’t have a single appetizer that is gluten free. So here, we’ve just created our own wing or drumette recipe!

2½tbspBBQ Sauce, gf
1teaspoonapple cider vinegar
1teaspoonLea Perrins Worcestershire, gf or other gf brand
1tbsphoney
1pinchcayenne pepper, gfoptional
Instructions
Buffalo Slightly Spiced Baked Chicken Wings
Mix the cassava flour and the gluten free 1 to 1 flour in a paper bag or a ziplock bag. Stir together in a flat bowl, the almond flour, breadcrumbs or cracker crumbs, cornmeal, salt, pepper, and garlic powder.
In another bowl, whisk or beat the egg with a fork.
Lightly salt and pepper the drumettes or wings.
Shake the drumettes in the flour mixture bag. Then dip in the beaten egg, followed by the breadcrumb mixture. After dipping in the breadcrumb mixture, immediately set on a parchment lined sheet or plate.
Cover with cellophane or foil and refrigerate for 1 hour.
Preheat the oven to 400 degrees F.
Heat a skillet with 3-4 tablespoons of oil in it. When the oil is very hot, brown the drumettes in one or two batches. Press them down into the pan. Turn them carefully to brown all sides. Place on a baking sheet lined with parchment.
Bake for 40 minutes, turning every 10-15 minutes. Toss in the sauce. Serve with ranch dressing for those that like to dip.
Buffalo Sauce
Combine the ingredients in a small saucepan. Heat over low to a simmer, stirring often. Remove from the burner and set aside.
Notes
How amazing that someone with a gluten allergy could enjoy a Buffalo Wing appetizer! You can easily make these gluten free and dairy free too. Just substitute dairy free butter in the sauce for a dairy free option.
