Appetizer anyone?

Getting to eat appetizers when dining out is one of my absolute favorite surprises. Often though, many restaurants don’t have a single appetizer that is gluten free. So here, we’ve just created our own wing or drumette recipe. These Baked Chicken Wings made Gluten Free are so yummy!

This may be dating us, but when my husband and I were first married, we used to buy chicken wings or drumettes for just $.27 a pound in the large value pack! Now people love the wing or drumette and the price has risen slightly. Still, it’s a fun appetizer to make and even now not too pricey!

Pan-fried and baked or deep fried?

Just pan-fried for a few minutes and then baked, we can say they are semi-healthy, right? Honestly, you don’t need to go to the trouble of deep frying, because they are delicious baked! But feel free to deep fry if you like.  

Use certified gluten free Sriracha or other ingredients if needed

Serve these coated in sauce. If you like spice just add another teaspoon or two of the sriracha in the sauce. I like to use Sky Valley Sriracha as it’s labeled gluten free. You can also increase the amount of cayenne pepper, but beware as it can sneak up on you!

How to serve them

Then just serve with homemade or a store bought ranch dressing for those that like it. You can serve plated on a bed of lettuce with some cut-up veggies to dip in the ranch as well. My husband and I aren’t ranch dressing fans, but our granddaughter definitely eats her share and our share of ranch dressing!

Equipment

  • 1 large skillet
  • 1 Baking sheet
  • parchment paper

Ingredients

Buffalo Slightly Spiced Baked Chicken Wings

  • 12 chicken wings or drumettes
  • 2 tbsp  cassava flour, gluten free
  • 1 ½ tbsp gluten free 1 to 1 flour
  • 1 large egg
  • ¼ cup almond flour, gf
  • cup gf breadcrumbs or gf cracker crumbs
  • cup cornmeal, gf
  • ¼ teaspoon  kosher salt
  • ¼ teaspoon  black pepper
  • ¼ teaspoon garlic powder
  • vegetable oil to pan fry

Buffalo Sauce

  • 2 tbsp butter or dairy free butter
  • 1-1½ tbsp Sky Valley Sriracha Sauce, gf or other gf brand
  • tbsp BBQ Sauce, gf
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Lea Perrins Worcestershire, gf or other gf brand
  • 1 tbsp honey
  • 1 pinch cayenne pepper, gf optional

Instructions

Buffalo Slightly Spiced Baked Chicken Wings

  • Mix the cassava flour and the gluten free 1 to 1 flour in a paper bag or a ziplock bag. Stir together in a flat bowl, the almond flour, breadcrumbs or cracker crumbs, cornmeal, salt, pepper, and garlic powder. 
  • In another bowl, whisk or beat the egg with a fork. 
  • Lightly salt and pepper the drumettes or wings.
  • Shake the drumettes in the flour mixture bag. Then dip in the beaten egg, followed by the breadcrumb mixture. After dipping in the breadcrumb mixture, immediately set on a parchment lined sheet or plate.
  • Cover with cellophane or foil and refrigerate for 1 hour. 
  • Preheat the oven to 400 degrees F.
  • Heat a skillet with 3-4 tablespoons of oil in it. When the oil is very hot, brown the drumettes in one or two batches. Press them down into the pan. Turn them carefully to brown all sides. Place on a baking sheet lined with parchment.
  • Bake for 40 minutes, turning every 10-15 minutes. Toss in the sauce. Serve with ranch dressing for those that like to dip. 

Buffalo Sauce

  • Combine the ingredients in a small saucepan. Heat over low to a simmer, stirring often. Remove from the burner and set aside.

Notes

How amazing that someone with a gluten allergy could enjoy a Buffalo Wing appetizer! You can easily make these gluten free and dairy free too. Just substitute dairy free butter in the sauce for a dairy free option.
