Satsuma, Avocado and Bell Pepper over a Bed of Spring Mix

Ingredients

  • 2 cups Spring Mix or Baby Spinach Leaves, triple washed
  • 1 Satsuma orange peeled, or half of an orange, peeled and sliced
  • ½ of an avocado sliced
  • ½ yellow bell pepper thinly sliced
  • ¼ small red onion sliced thin

Lemon Vinaigrette

  • Juice from a half of small lemon
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 1 tablespoon water
  • ½ teaspoon oregano
  • 1 teaspoon honey, optional
  • Pinch of salt

Instructions

  • Add the ingredients in the order listed to your bowl. Add the vinaigrette and toss to combine.

Lemon Vinaigrette

  • In a small jar or bowl combine the ingredients below and stir together.
