Cookies and Cream Ice Cream made Gluten Free

Enjoy this cookies and cream ice cream made gluten free using gluten free sandwich cookies. Everyone will enjoy this creamy cookie ice cream!

Ingredients

  • 1⅔ cups whole milk
  • ¾ cup sugar or organic sugar
  • cups heavy cream
  • ¼ teaspoon salt
  • teaspoons Molina Pure Vanilla Extract, gf or other gluten free vanilla or vanilla paste
  • 8 Trader Joe's Gluten Free Joe-Joe's Chocolate Vanilla Creme Sandwich Cookies or Gluten Free Oreos, chopped

Instructions

  • Add to a large bowl the sugar and milk and whisk until the sugar is dissolved. Add the cream, salt, and vanilla.
  • Whisk gently until combined. Cover and refrigerate 3-4 hours or overnight.
  • Process according to ice cream machine's directions. Add the chopped cookies during the last 5 minutes. Then finish processing.

  • Scoop into one or two containers. Freeze for 1-2 hours for a firmer ice cream. Makes 2 pints (plus a small taste).
