Homemade Gluten Free and Grain Free Ice Cream Sandwiches
20-24Gluten Free/Grain Free Chocolate Almond Cookiesbake as directed below
2-3 pints ice creamgluten free if needed
chopped almonds, chocolate chips, or sprinkles for rolling the edges ingluten free if needed
Instructions
Gluten Free/Grain Free Chocolate Almond Cookies
Follow the recipe for the making the cookie dough (Link above). Refrigerate the dough for 1-2 hours.
Preheat the oven to 325 degrees. Scoop and roll into 1" balls and place several inches apart on a parchment lined baking sheet. Bake for 10 minutes.
Flatten each cookie with a glass to 1/4" thick. Bake for 3-4 minutes more. Remove the baking sheet from the oven but let cookies sit on the sheet for 3 minutes before moving to cool completely on a parchment over a wire rack.
Ice Cream Sandwiches
Pair up your cookies and place each stack on a 8" square of cellophane or parchment. Turn the cookies over so bottoms are facing up.
Scoop slightly softened ice cream or gelato of your choice onto one cookie. Cover with another cookie. Add small teaspoonfuls of ice cream to fill in the edges, pressing in gently.
Dip the edges in chocolate chips, chopped almonds, or sprinkles.
Wrap each sandwich in parchment or cellophane just after putting it together. Move right away to the freezer for 4-6 hours. Repeat the process for remaining ice cream sandwiches.
