Homemade Gluten Free Grain Free Ice Cream Sandwiches


Homemade Gluten Free and Grain Free Ice Cream Sandwiches with Talenti Coffee Chocolate Chip Gelato are the perfect summer dessert! These are such a treat! What’ the best part? It’s that you can use any ice cream flavor, brand, or even homemade ice cream in these!

Are there any gluten free ice cream sandwiches out there?!

I’ve never found a gluten-free ice cream sandwich. Sometimes, I make ice cream sandwiches with my Gluten Free Soft Honey Ginger Cookies, but this time, I went with a chocolate cookie, using my Gluten Free Grain Free Chocolate Almond Cookie recipe.

I’ve taken my Gluten Free/Grain Free Chocolate Almond Cookie recipe and used it for these ice cream sandwiches. With a few modifications, it turned out wonderfully.

Gluten free and grain free with a dairy free option

While they are both gluten free and grain free, you can also choose to make these cookies and ice cream sandwiches dairy free. The only substitutes you will have to make is to use a dairy free or vegan butter substitute (gluten free too) in the cookies. Then, be sure to use a dairy free and gluten free ice cream when filling the ice cream sandwiches.

The gluten free grain free chocolate almond or chocolate espresso cookies are delicious on there own, but with this simple change to the baking process, you can make them as the cookie for ice cream sandwiches

This is such an extravagant dessert for me. This is coming from someone who before not being able to eat gluten, loved IT’S It Ice Cream Treat ice cream sandwiches more than life itself!

I would give anything to have one still! The link above is for the 3 pack of vanilla ice cream filled sandwiches at Target. But my favorite flavors are the Cappuccino or the Mint! IT’S It makes so many flavors now: Pumpkin, Strawberry, Chocolate, and Chip’s IT, a chocolate chip cookie with vanilla ice cream.

Gluten Free? You don’t have to miss out on ice cream sandwiches anymore!

Not being able to eat gluten means missing out on many foods, but we aren’t going to miss eating ice cream sandwiches any longer! These homemade ice cream sandwiches are very good! They are also quite easy to make!

Another plus, is that you can choose whatever kind of ice cream you would like, to fill two cookies. You could even freeze them after filling, then dip them in melted chocolate of your choice.

The best part ~ you choose the ice cream flavor and nuts, chocolate or sprinkles for the edges!

What’s the flavor of ice cream you will chose? You could also use several different flavors if you want to give the eaters choices.

Gluten Free/Grain Free Chocolate Almond Cookies

  • 1 recipe Gluten Free/Grain Free Chocolate Almond Cookie Dough follow the recipe for making the Chocolate Almond version

Homemade Gluten Free and Grain Free Ice Cream Sandwiches

  • 20-24 Gluten Free/Grain Free Chocolate Almond Cookies bake as directed below
  • 2-3 pints ice cream gluten free if needed
  • chopped almonds, chocolate chips, or sprinkles for rolling the edges in gluten free if needed


Gluten Free/Grain Free Chocolate Almond Cookies

  • Follow the recipe for the making the cookie dough (Link above). Refrigerate the dough for 1-2 hours.
  • Preheat the oven to 325 degrees. Scoop and roll into 1" balls and place several inches apart on a parchment lined baking sheet. Bake for 10 minutes.
  • Flatten each cookie with a glass to 1/4" thick. Bake for 3-4 minutes more. Remove the baking sheet from the oven but let cookies sit on the sheet for 3 minutes before moving to cool completely on a parchment over a wire rack.

Ice Cream Sandwiches

  • Pair up your cookies and place each stack on a 8" square of cellophane or parchment. Turn the cookies over so bottoms are facing up.
  • Scoop slightly softened ice cream or gelato of your choice onto one cookie. Cover with another cookie. Add small teaspoonfuls of ice cream to fill in the edges, pressing in gently.
  • Dip the edges in chocolate chips, chopped almonds, or sprinkles.
  • Wrap each sandwich in parchment or cellophane just after putting it together. Move right away to the freezer for 4-6 hours. Repeat the process for remaining ice cream sandwiches.
