A lover of flat breads
Do you love flat breads? I sure do! There are so many ways to enjoy them! Whether I fill them with a Mediterranean flavored meat, Gyro style, eat them with hummus and vegetables, or just enjoy them with a dipping oil, I always feel so special when I get them.
I definitely should make them more often, since they aren’t hard to make and can be ready in just about a half hour. They’re also perfect for a Mediterranean soup and salad night.
Soup and Salad Night or for Gyros
One of my favorite winter meals consists of a lentil soup and flat breads. The dipping oil is so delicious too! If you’re looking for a hearty Mediterranean soup, try this Mediterranean Lentil and Bean Soup (Gluten Free and Vegetarian Option).
You can serve these flat breads as you would naan or pita. Actually I found when I reheated them at 400 degrees for several minutes, they actually opened up just like a pita bread!

This makes it is a perfect bread for filling with a Greek or Mediterranean style chicken or other meat. We love this Marinated and Grilled Greek Chicken (Gluten Free). It’s loaded with flavor and is some yummy for a Gyro with a small amount of tomato and cucumber salad and a little sauce.
Let’s talk about Boursin Cheese!
Who doesn’t love the taste of Boursin Cheese?? I also love that their cheese is labeled gluten free! It’s so delicious spread on a cracker! Now we have have the same flavor in these gluten free flat breads. So yummy!
Although, I enjoy both flavors of their cheese, in this recipe I prefer the Boursin Garlic and Fine Herbs Gournay Cheese. If you really love this one, Walmart has it in a 12 pack, Boursin Garlic and Fine Herbs Gournay Cheese – 12 pk. This would be perfect for a party!

Gluten Free Flat Breads with Boursin Cheese and Dipping Oil
Equipment
- 1 Skillet or cast iron or griddle
Ingredients
- ½ cup Anthony's Brown Rice Flour
- ½ cup Anthony's White Rice Flour, gf
- ½ cup Bob's Red Mill Tapioca Flour, gf also know as tapioca starch
- 1 teaspoon baking powder, gf
- ½ teaspoon fine sea salt
- ¼ cup Greek yogurt or plain yogurt
- 6 tbsp almond milk, gf or whole milk
- ½ of 5.3 oz Boursin Cheese round
- 1 tbsp extra virgin olive oil
Dipping Oil
- 2 cloves garlic
- 2 tbsp extra virgin olive oil
- ½ teaspoon dried basil, gf or 1 teaspoon chopped fresh basil
- ½ teaspoon dried oregano, gf
- ½ teaspoon dried rosemary, gf, crushed or 1 teaspoon minced fresh rosemary
- 2 tbsp balsamic vinegar
- sprinkle of sea salt
Instructions
- Mix all the ingredients in a bowl, using clean hands to combine at the end. Add 1/2-1 tbsp more of milk if needed for a pliable dough. Form into a ball.
- Divide into 8 pieces, rolling each into a ball.
- Flatten between cellophane and roll to a round, keeping the others covered with a wet towel.
- Heat a skillet over medium heat. Add a spray of vegetable oil. Cook each flatbread for about 3 minutes, turning halfway. Add more oil as needed.
Dipping Oil
- Stir the oil with the herbs and garlic together in a small bowl. Microwave for 30 seconds or heat in a saucepan until aromatic. Pour into a bowl. Add the balsamic vinegar and a sprinkle of red pepper or Aleppo pepper if desired.
